Recipe For Buckeye Candy

 

2 cups peanut butter, smooth or crunchy
1 stick of margarine, melted
2 teaspoons vanilla
2 & 1/2 cups powdered sugar

Mix all ingredients together.  If too wet, add extra powdered sugar.  Roll mixture into balls with your hands, place them on a cookie sheet covered with wax paper, and freeze for 15 minutes.

1 package chocolate bark coating

                   or

1 package chocolate chips 
1/2 cake paraffin

If you don't use bark coating then melt the chocolate chips and paraffin in a heavy pan.  Or heat the bark coating until melted.

Stick a toothpick into the cold buckeyes and dip into the melted chocolate.  Almost cover the candy with chocolate, leaving one spot with the peanut butter exposed.  Place on a cookie sheet covered with wax paper.Put in freezer until they are set.
